Loaded Veggie Fries with Caramelized Onions and Healthy Garlic Aioli

(I used frozen veggie fries here from Actual Veggies but you can take white or sweet potatoes and slice them into fries with a mix of carrot fries or turnip fries too!)

These BLEW me away. So freaking good and so fun. My husband and I shared them for lunch one day and another day I had them on the side for friends when they came over for dinner. Just so good and such a fun way to uplevel veggies.

Loaded Veggie Fries with Caramelized Onions and Healthy Garlic Aioli

Ingredients

  • 1-2 cups of ActualVeggies Fries

  • 1 cup greek yogurt

  • 2 cloves garlic

  • 2-4 tbsp lemon juice

  • 1 tbsp olive oil

  • 1 tsp salt or to taste

  • 2-4 tbsp water or vegetable broth to thin

  • Caramelized onions:
  • 1-2 large sweet onions, thinly sliced

  • 1.5 cups vegetable broth (reserve the second half cup)

  • 1/2 tsp salt

Directions

  • Preheat oven to 425. Lay Actual Veggies fries onto a non stick baking sheet. Bake in the preheated oven for 12-15 minutes or until crispy.
  • While the oven is preheating and fries are baking, in a pan over the stove add 1 tbsp olive oil, sliced onion, and 1 cup broth. Cook over medium heat for ~15-20 minutes stirring occasionally in between. When all the broth is evaporated, add the last 1/2 cup of broth and continue cooking until it’s evaporated and the onions are caramelized.
  • While the onions are caramelizing, prepare the greek yogurt garlic aioli by adding greek yogurt, garlic, lemon, olive oil, and salt to small bowl. Mix until combined. Slowly add water or broth until you’ve reached desired consistency.
  • Add finished fries onto a plate or bowl. Top with caramelized onions. Finish with garlic aioli. Enjoy!!
