Smashed Potatoes

We love a good smash potato in my house! It’s a filling an easy to digest carb that packs a punch with micronutrients! Be sure to pair them with a low starch veggie like broccoli and a lean protein like shrimp or chicken if you’re interested in balanced meals that support fat loss and overall health!

Ingredients

  • 1-2 lbs baby potatoes

  • Olive oil or avocado oil spray (alternatively 2-3 tbsp oil)

  • Salt to taste

Directions

  • Wash potatoes then add to a large pot. Fill pot with water until the potatoes are fully covered. Bring to a boil and continue to boil for ~20-30 minutes or until fork tender
  • Preheat oven to 450. Line a baking sheet with parchment paper
  • Drain potatoes and when they’re cool enough to handle, transfer to prepared baking dish. Using the bottom of a cup, smash the potatoes.
  • Evenly coat with oil and salt.
  • Bake in the oven for ~30 minutes or until crispy.
  • Enjoy!
