
We meal prep these cookies to always have a delicious, after dinner snack on hand. (They also make a great pre workout if you need one!)
With just dates, walnuts, and flax, they’re so nutrient dense and for lack of a better word… healthy! These are the most nourishing cookies you’ll ever eat and I promise, you won’t miss the refined sugar stuff when you’re eating this! That’s coming for a sweet tooth obsessed person – me!

1.5 cups walnuts
1 cup packed pitted dates
1 tbsp flax
3 tbsp water
1 tsp vanilla
1/2 tsp baking soda
Pinch of salt
1 tsp apple cider vinegar
Directions
- Directions:
- Preheat oven to 350 and line a baking sheet.
- Process walnuts until they’re mostly chopped
- Add the rest of the ingredients and process until it forms a packed dough
- Roll into equal sized balls and press flat onto the baking sheet
- Bake for 12-13 minutes or until the edges brown. Allow to cool completely and enjoy!
