Date Walnut Cookies | gluten free, dairy free, refined sugar free

We meal prep these cookies to always have a delicious, after dinner snack on hand. (They also make a great pre workout if you need one!)

With just dates, walnuts, and flax, they’re so nutrient dense and for lack of a better word… healthy! These are the most nourishing cookies you’ll ever eat and I promise, you won’t miss the refined sugar stuff when you’re eating this! That’s coming for a sweet tooth obsessed person – me!

Ingredients

  • 1.5 cups walnuts

  • 1 cup packed pitted dates

  • 1 tbsp flax

  • 3 tbsp water

  • 1 tsp vanilla

  • 1/2 tsp baking soda

  • Pinch of salt

  • 1 tsp apple cider vinegar

Directions

  • Directions:
  • Preheat oven to 350 and line a baking sheet.
  • Process walnuts until they’re mostly chopped
  • Add the rest of the ingredients and process until it forms a packed dough
  • Roll into equal sized balls and press flat onto the baking sheet
  • Bake for 12-13 minutes or until the edges brown. Allow to cool completely and enjoy!
