When I first started balancing my meals I thought I had to cut out rice and only eat plain cauliflower rice, but the truth was, I just didn’t like cauliflower as my rice and I was not satisfied after eating it. I like white rice and I wanted to eat it.
I’m also a volume eater and enjoy a slightly larger portion of rice than just a half cup sometimes. Sooo, putting into practice my “practical balance” motto, I thought, it has to work with rice too, right?! And thus, cauliflower rice fluff was born.
When you cook the cauliflower rice with white rice, the starches from the rice mesh seamlessly with the cauliflower to create the perfect rice filled with cauliflower, and no, you can’t taste it or feel it.
Cauliflower Rice Fluff

10oz frozen cauliflower rice
1 cup white rice, rinsed
1 1/4 cups water
salt to taste
1 tbsp olive oil
optional: 1/2 onion, chopped
Directions
- To a pot add 1 tbsp olive oil, optional onion, and frozen cauliflower rice. Sautee for ~5 minutes or until the cauliflower rice releases some water.
- Add in the rinsed white rice. Pour in water and season with salt to taste.
- Bring pot to a boil then cover and reduce to a simmer for ~20-25 minutes or until all the water is absorbed.
- Fluff and serve!
