Tabbouleh Salad

A traditional Middle Eastern salad found all over the levante region! Low key, parsley has so many health benefits, so good for helping your body with detoxifying toxins and so nutrient dense. Eat more of it!

Tabbouleh Salad

Ingredients

  • 3 bunches parsley

  • 2-3 large lemons, squeezed

  • 1/4 cup bulgur, prepared according to package directions

  • 6 medium tomatoes

  • Optional: 1 large cucumber

  • 2-3 cloves garlic, finely chopped or grated

  • 3 tbsp olive oil

  • Salt to taste

  • 1/3 cup Mint

Directions

  • Wash parsley and lay it out on paper towels to dry. I leave it out over night but you can dab with a paper towel and ring out as much moisture as possible
  • Cut the large stems off the parsley leaving behind only the leaves and small connecting stems
  • Chop all the vegetables as small as possible. Tabbouleh is finely chopped.
  • Add chopped cucumbers, tomatoes, mint, and parsley to a large salad bowl
  • Add prepared bulgur, lemon, garlic, and salt.
  • Taste and adjust lemon and salt as needed
  • Let sit for ~30 minutes before serving to let flavors infuse.
  • Serve!
