Veggie Filled Green Curry & Meatballs

- Meatball Ingredients:
8oz mushrooms, finely chopped or processed
1/2 cup green onions, sliced
1 lb lean ground beef (or ground chicken)
1 tbsp Thai green curry paste (I used @thaikitchen)
1-2 tbsp fish sauce (can use soy sauce)
Salt and pepper to taste
2 tsp Ginger
- Curry Ingredients:
1 tbsp olive oil
1 yellow onion, chopped
1 medium eggplant, cut into cubes
1 cup carrots, shredded or chopped
16oz mixed peppers, sliced fresh or frozen
1 can coconut milk
6oz green curry paste
2 tbsp fish sauce, can sub soy sauce
Optional: water to thin
Directions
- Preheat oven to 400, line a baking sheet, set aside
- Chop or process mushrooms and green onion. Using your hands mix it in a bowl with ground beef, 1-2 tbsp green curry paste, fish sauce, salt and pepper, and ginger.
Form meat mixture into equal sized meatballs, transfer to lined baking dish and bake for about 20 minutes - While the meatballs are baking dice onion, eggplant, carrots, and mixed peppers if not already chopped.
- To a large pot add a tablespoon of olive oil and chopped white onion. Sauté until translucent. Add eggplant, carrots, and peppers. Continue cooking over the stove until veggies are mostly soft.
- Add coconut milk, green curry paste, fish sauce, and optional water or broth to reach desired consistency.
- Taste and adjust any seasonings as needed.
- Add in finished meatballs and simmer over the stove for ~5 minutes until everything is combined
- Plate over rice and serve!
