Spicy Cashew Salad w/ Cilantro Jalapeno Dressing (Copycat Sweetgreen Salad)

2 tbsp olive oil
2 tbsp lemon
2 tsp honey
Chili flakes to your taste
Chili powder to your taste
2 tsp paprika
1 cup cashews
1/2-1 sweet potato per serving
2 cups shredded cabbage
2 cups shredded carrots
2lbs grilled chicken breast or protein of choice
- Cilantro Jalapeno Dressing
1/2 cup cilantro
Juice of half a lime (sub lemon)
1/4 cup greek yogurt
1-2 tbsp olive oil
1/2-1 jalapeño
1-4 tsp cumin
* 1-2 tbsp rice/white vinegar
* 1 tsp sesame oil (optional)
Directions
- Preheat oven to 350. Combine olive oil, lemon, honey, chili flakes, chili powder, & paprika. Fold in cashews, mix. Transfer to baking sheet & bake for 20 min flipping half way through.
- Slice sweet potatoes into wedges. Season with olive oil spray and salt and bake on a lined baking sheet at the same time as the cashews.
- Transfer cilantro, lime, olive oil, jalapeno, cumin, vinegar, yogurt, and sesame oil to a blender and blend until smooth. Taste and adjust seasonings as needed.
- Serve over shredded cabbage & carrots.
