Ingredients

  • 4 Yellow potatoes, thinly sliced

  • 1-2 large zucchini, thinly sliced

  • 4-6oz mushrooms, sliced

  • Oil spray of choice (olive, avocado, coconut)

  • Salt and pepper to taste

  • 1 tbsp dill

  • 2 tsp Paprika

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 3 white onions, thinly sliced

  • 1.5 cups broth

  • 1.5 lbs lean ground beef

  • Salt and pepper to taste

  • Onion and garlic powder to taste

  • 1/4 cup pickle juice

  • Sauce:
  • 1 cup Greek yogurt

  • Juice of a lemon

  • Salt

  • 2 tsp onion powder

  • 2 tsp garlic powder

  • 2 tbsp dill

Directions

  • Preheat oven to 375. Line 2 baking sheets with parchment paper
  • Lay sliced potatoes on one. Spray with olive oil, season with salt and dill. On the other baking sheet evenly spread sliced zucchini and mushrooms. Season with paprika, onion and garlic powder, salt, and olive oil spray. Bake both trays at the same time for about for ~30 minutes or until cooked through.
  • While that’s baking, add onions and broth to a pan with a dash of salt. Cook on medium heat for ~20 minutes stirring occasionally or until broth is gone and onions are soft.
  • Remove onions from the pan, transfer to a plate and set aside. Make ground beef in the same pan with salt, onion and garlic powder, and pickle juice until browned.
  • In a bowl combine sauce ingredients. Taste and adjust seasonings as needed. Add water to thin if needed.
  • Assemble bowl with veggies, potatoes, meat, onions, sauce, and enjoy!
