Healthy & High Protein Asian Inspired Beef & Broccoli

This is a staple recipe in our house, my client’s homes, clients who have lost and maintained 20 pounds postpartum and clients losing weight in menopause. Not only is it high protein and filled with veggies to keep you full longer, but it tastes BETTER than take out. Hands down!

Ingredients

  • 1 lb lean ground beef

  • 2 cups carrots

  • 1 onion

  • 4 cloves garlic

  • 1 tbsp sesame oil

  • 1 large head broccoli

  • Sauce Ingredients

  • 3 tbsp Sesame Oil

  • 3 tbsp Rice Vinegar

  • 2-4 tbsp Sriracha (depending on your spice preference)

  • 6 tbsp Brown Sugar or sweetener of choice

  • 3/4 cup Soy Sauce

  • Garnishes

  • 1 bunch Green Onions

  • 2 tbsp Sesame Seeds

Directions

  • Add onion, garlic, and carrots to a food processor and process until chopped. To a large wok or pan add sesame oil and veggies, sauté until soft. Add ground beef and cook until beef is cooking through.
  • Remove beef mixture from the pan and set aside. Back to that pan, steam 1 large head broccoli florets.
  • While broccoli is steaming, add sauce ingredients to a jar (soy sauce, brown sugar, vinegar, sesame oil, sriracha), seal tightly, and shake until all ingredients are well incorporated. You can also do this in a bowl and just stir it!
  • When the broccoli is cooked through, add back the beef and veggie mixture, pour over prepared sauce. Cook together for 2-4 minutes to incorporate flavors.
  • Serve over butter lettuce wraps or over white rice!
