One Bowl Banana Fiber Muffins

These are the only banana muffins I make! They’ve gone viral on Instagram over and over and made by so many of you. Your family’s love them, your kid’s love them, and I love them! They’re made with oat flour, flax, and bananas all helping to boost the fiber and help you feel genuine fullness and shut off hunger hormones for hours to come.

Ingredients

  • 2 1/4 cups oat flour

  • 2/3 cup honey

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3 very ripe bananas, mashed

  • 1/2 cup plain Greek yogurt (nonfat or regular)

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1/4 cup chopped walnuts, pecans or chocolate chips

  • 3 tbsp flax meal/ground flax seeds

Directions

  • Combine dry ingredients (oat flour, baking soda, salt).
  • Add wet ingredients (honey, mashed bananas, yogurt, eggs, vanilla). Mix until just combined
  • Fold in ground flax and add ins of choice.
  • Bake at 350 oven for 30 minutes and enjoy!
