Healthy White Chicken Chili

1 white onion, chopped
4 cloves garlic, minced
1 tbsp olive oil
1 large eggplant (or 4-5 minis)
1 medium zucchini (or half a large)
4oz sliced mushrooms
1 jalapeño, diced (no seeds)
1lb lean ground chicken
Salt and pepper to taste
1 tbsp paprika
2 cans white beans, drained and rinsed
4 cups broth
1 tbsp fennel seeds (optional, I love the flavor)
1 tbsp chili powder
Directions
- Prepare all your ingredients first. Chop onions, garlic, eggplant, zucchini, mushrooms, and jalapeño. Drain and rinse beans.
- To a large pot add olive oil and onion and sauté until translucent. Add garlic and cook until fragrant. Add chicken and season with salt and pepper and paprika. Cook until chicken is mostly cooked through. Remove from heat and set aside.
- To the same pot add eggplant, zucchini, mushrooms, and jalapeño. Sauté for ~5-8 minutes or until the vegetables start to soften.
- While the veggies are cooking blend HALF of the white beans to form a paste. This will help thicken the sauce.
- Add the blended beans and whole beans to the pot. Add broth, fennel, chili powder, and more salt and pepper to taste. Add back your chicken.
- Simmer on low-medium heat until everything is well combined and cooked through. Enjoy!!
