I made these this past weekend as a cookie cake and they were a huge hit. I had to make them again for another family dinner yesterday and now they’re also meal prepped for the week at my house! Not sick of them. Definitely a repeatable recipe.

Healthy Blondies | gluten free, refined sugar free, dairy free

1 cup coconut oil or butter, melted
1.5 cups coconut sugar
2 eggs
1 tsp vanilla
1.5 cup flour of choice (all purpose, 1:1 gf substitute, or 1/2 almond flour, 1/2 coconut flour)
1 tsp baking soda
1/4 tsp salt
Optional: 1/2 cup chocolate (have made without and they’re delicious)
Directions
- Combine melted butter and coconut sugar in a mixing bowl until well combined & fluffy
- Add eggs, vanilla and mix again
- Add flour, baking soda, and salt and mix until just combined.
- Fold in chocolate chips or chopped chocolate
- Transfer to a 9×9 baking pan lined with parchment paper and bake at 350 for 30-35 minutes or until the middle is *just* set
- Allow to cool completely before slicing in
- For a more cookie texture, transfer to the fridge to set. For a brownie texture, serve as is!
