I made these 2 times in the last 2 weeks and served them to 3 different groups of people – everyone loved them! What I love is the filling factor and satisfaction one gives so you’re not left coming back for 3 more lol. You’ll want to because they taste so good! But you won’t need to because you’ll be satisfied. That’s often the difference between “healthier” desserts and the regular ones. A crumble cookie leaves you wanting more. It packs a lot of calories into a bite and one bite turns into 5. Whereas these are perfectly portioned, have fiber, and 1 leaves you feeling better than before instead of worse. All foods fit but not all foods fit all the time. And when you need to put your health first 80-90% of the time, these are a must!

No Bake Cinnamon Rolls

Ingredients for filling:
– 1 cup dates
– Pinch of salt
– 1 tbsp cinnamon
– 1 tbsp oil of choice (coconut or olive oil)
– 1 tsp vanilla
– Optional 1 tbsp water
Ingredients for Dough:
– 1 cup oat flour
– 1 cup almond flour
– 2.5 tbsp coconut oil
– 2 tbsp maple syrup
– 1 tsp vanilla
– Pinch of salt
Directions
- Soak dates if they’re frozen or hard like mine and set aside. If they’re soft, you don’t need to soak them
- Prepare dough by adding all ingredients to a food processor and blend until a dough forms.
- Form the dough into a ball then roll into a thin rectangle on a piece of parchment paper. Set aside in the fridge while you make your filling
- To the same food processor (no need to wash it) add pitted and drained dates, salt, cinnamon, oil, vanilla. Blend until well combined and smooth. If the filling is too thick, add a tablespoon of water, blend again.
- Remove the dough from the fridge. Spread the filling onto the dough. For me, the filling was thick and worked better using a wet hand to spread it evenly.
- Carefully roll into a log and slice into even sized rolls. Enjoy!
