Olive Oil Brownies

I’ve been making these for years! I always have the ingredients on hand and they come together in one quick bowl so I can satisfy my brownie craving at any time, no flour, and a little healthier 🙂

Olive Oil Brownies

Ingredients

  • 2/3 cup olive oil

  • 2/3-3/4 cup monk fruit granulated sweetener (depends on your sweet preference. I find monk fruit to feel sweeter than granulated sugar and use a 2/3 cup. If using regular sugar, 3/4 cup would taste “normal”)

  • 1/2 cup brown sugar

  • 3 eggs

  • 1 cup cocoa powder

  • 2 tbsp arrowroot, cornstarch, or flour

  • 1 tsp salt

  • 1 tsp baking powder

  • 1/2 cup chocolate chips

Directions

  • Preheat oven to 350. Line a 9×9 square baking dish with parchment paper. I spray with olive oil spray to get my parchment paper to stick to the pan
  • Mix all ingredients except for chocolate chips in a mixing bowl until combined. Fold in chocolate chips
  • Transfer batter to prepared baking dish.
  • Bake for 25-28 minutes or until just set. Allow to cool completely and continue to set.
  • Option to serve with a scoop of your favorite ice cream, drizzle of olive oil, and dash of sea salt or enjoy as is!
