I love an Aloha Bar. I think the lemon flavors are the only ones I’ve tried but I’m HOOKED. I just don’t want to spend that much money on them anymore! So I needed a copycat recipe at home and that’s exactly what we got. They smell like cake and taste almost identical to the store bought bars. Comes together in one food processor and you’re good to go. Mine live in the freezer or fridge individually wrapped in plastic wrap so they’re as convenient as the protein bar. In love.

Lemon Protein Bars | Gluten Free, Vegan, Easy

2 cups oats
1/2 cup cashews
1/4 cup shredded unsweetened coconut
1-2 scoop protein powder of choice or 4 scoops collagen
4 tbsp cashew butter (a neutral nut butter is necessary. Almond butter or sun butter could work but not PB)
1 tsp vanilla
Zest of a lemon
1/4 cup maple syrup
Directions
- Line a 9×9 pan with parchment paper. In a food processor combine all of your ingredients. Pulse until you’ve reached a dough like consistency and the cashews are broken down
- Press into your lined baking sheet in an even layer and set in the fridge or freezer until firm
- Slice and serve! Let it live in the fridge or freezer!
